    Tips and Hints

    ♦   Brine your fish in a salt and brown sugar solution before you smoke it, pat fish dry with paper towels before smoking.

    ♦   To create more smoke with you sawdust lightly wet the sawdust with some water this helps to create more smoke.

    ♦   Only use methylated spirits as fuel other fuels can contain oils and other chemicals that will make your food inedible and could be harmful to your health

    ♦   Use commercial smoking sawdust because some timbers contain resin or other toxins that can make your food inedible.

    ♦   Please observe safe food handling practices when smoking and preparing fish
